The verb form
In Catalan T’estimo means I love you, however, in Cadaqués, the first person singular of the present indicative ends in “i”.
The story behind it
The personal link between Somni d’istiu and Cadaqués represented not just the beginning of the project, but also the name of our first wine.
Somni d’istiu’s first wine.
Grenache noir (known as lledoner roig in the Empordà region) and Grenache blanc (lledoner blanc).
We were after oxidation. We wanted density. We were looking for peculiarity. We aimed for personality. We longed for intensity. We dreamed about T’estimi.
Fermentation in stainless steel. Aged in an old French oak barrel imbued with stories of Xarello.
LA FÀBREGA 2021
The place name
In the legal documents of the wine keeper of the Monastery of Sant Pere de Rodes there is a farmhouse in the outskirts of the village of La Selva de Mar called La Fàbrega.
The story behind it
In the document, dated 22 November 1426, it was specified that one Ponç Ferrer recognised the ownership, or direct domain, of the farmhouse in which he lived. Mas La Fàbrega was the private property of the working monk of the monastery and the occupant had to pay various taxes to the monastery, known as censos.
Mas La Fàbrega also had a forge, in other words a structure designed for making iron. In fact, in Catalan farga and fàbrega both mean forge. This is why Ponç was called Ferrer (Catalan for blacksmith), because he was the blacksmith in La Selva and he shaped the iron.
Our first red wine pays homage to the estate and to the property which has, to a great degree, made this dream possible.
La Fàbrega was created from two of the five micro-plots on this estate, where Ponç Ferrer tended the vine known as La Mallola. Fermented in stainless steel and aged in a French oak barrel of a certain age imbued with chapters of Grenache and Cariñena from the Mar d’Amunt, and in an American oak barrel, to play around, to try things out, to allow the wine to flow and express itself freely.
Interjection. It denotes strangeness and admiration. It is a term frequently used by the locals in Cadaqués. It is said that in Cadaqués it is impossible to speak without using this expression.
The story behind it
We wanted to add it to the deposit in which the fermentation of T’estimi started until we tasted it again, when the expression was “ix! This must is electrical!”.
Somni d’istiu’s second wine.
Grenache noir, Grenache blanc and Muscat of Alexandria.
We wanted greenness and when you taste it, it’s there. We wanted bitterness and when you taste it, it’s there. We wanted freshness and when you taste it, it’s there. We wanted fruit and when you taste it, it’s there. We wanted to play. We wanted to learn. The grape and the Muscat of Alexandria helped us and went well with the Grenache noir and the Grenache blanc to have fun in the glass.
Fermentation, a few months ageing in stainless steel and straight into the bottle!
